Ingredients

- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups chocolate chips
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking soda, and salt. Set aside.
- In a separate large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Stir in the chocolate chips.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake for 9-11 minutes, or until the edges are golden brown. The centers may still look soft.

Notes
For best results, ensure your unsalted butter is properly softened. Also, don't overbake your cookies; they should be slightly soft in the center when removed from the oven.
